Whipped Cream Cake

Ingredients
- 1/2 tsp salt
- 3 tsp baking powder
- 1 1/2 cups sugar
- 2 cups pastry flour
- 3 egg whites
- 1 cup 35% whipping cream
- Vanilla to taste (at least 1 tsp)
- 1/2 cup of water

Pre-heat oven to 250 degrees Fahrenheit

Sift the dry ingredients together

Whip the egg whites to stiff peaks
- 4
Whip the cream to stiff peaks

Fold the egg whites into the whipped cream
- 6
Stir in the vanilla and water

Mix in the dry ingredients. Mix in about 1/4 of the dry ingredients in at a time.

Bake in a 9x9 pan, a tube pan or a bundt pan for 25 to 35 minutes (mine took 37 minutes) until a tester comes out clean.

Could add lemon zest to the mix, or put lemon curd, a fruit compote, chocolate or caramel syrup on top. Also tastes yummy with ice cream!
