Squash Puff

Ingredients
  • 3 cups mashed Butternut Squash
  • 1/2 - 1 cup onion
  • 2 tbsp. of butter
  • 2 large eggs (separated)
  • 1/4 cup milk
  • 3 tbsp. flour
  • 3 tsp. baking powder
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 cup + bread crumbs

    Preheat oven to 375 Fahrenheit

    Boil/Steam/Whatever squash until soft, and mash it.

    Sautee onion in butter until limp.

  4. 4

    Add to mashed squash.

    Beat in egg yolks and milk to squash mixture.

  6. 6

    In separate container mix flour, baking powder, salt, and pepper.

    Combine flour mixture to squash mixture.

    Beat egg whites until stiff peaks

  9. 9

    Fold in egg whites to squash mixture with a spatula.

    Butter oven safe dish and pour mixture into dish.

    Top with buttered crumbs

    Put in oven and bake for 25 minutes or until top is golden brown.
