Ingredients
- 2 tbsp butter
- 1 medium onion diced
- 2 medium carrots diced
- 2 celery sticks diced
- 1 tsp salt
- 1 tsp dried basil
- 1 tsp garlic powder
- 1/8 tsp ground pepper
- 3 tbsp all purpose flour
- 4 cups vegetable broth
- 1 pack potato gnocchi
- 2 cups half and half
- 3 oz fresh spinach chopped
- 2 oz cream cheese

In a large pot, first melt the butter on medium heat. Then add your onions, carrots, and celery. Sautee these for about 5 minutes.

After they’ve sauteed, add in the seasonings along with the all-purpose flour and mix well.

Next, pour your vegetable broth in the pot. Bring everything to a boil and then cover and simmer on low for about 30 minutes.

Once the 30 minutes have hit, uncover your pot, add in the gnocchi, and cook for 5 minutes.

Then, add the half & half, chopped spinach, and cream cheese!

Continue cooking for another 5 minutes until the cream cheese has melted completely.
